Randolph M. Probstfield was born in Prussia in 1832. He emigrated to the United States in 1852, living in Wisconsin and Michigan prior to coming to Minnesota. It is known that he worked in the lumbering business out of St. Paul and traveled through much of the country and to Latin America during the mid 1850s. In 1859, Probstfield moved to the Red River Valley area, becoming so far as to be known, as the first white settler in Clay County.
The Schroeder potato business began with Henry Schroeder (1855-1928), a German immigrant. Henry Schroeder settled a homestead near Sabin Township, in Clay County, in 1878. He began growing potatoes in the early 1890s.
The village of Hitterdal, Minnesota, is located on the eastern end of Clay County. It was founded in 1884 and incorporated as a township in 1918.

Solomon Gilman Comstock (1842-1933) was a pioneer Moorhead, Minnesota resident when he arrived in the Valley in 1871 at the age of 29. Comstock was a lawyer, businessman and legislature during his life in Moorhead. Comstock was the first County Attorney for Clay county and held similar posts in Pembina and Stutsman Counties in Dakota Territory.
A grandson of Clay County pioneer R.M. Probstfield, Raymond Gesell was born in LaCrosse, Wisconsin on March 19, 1896. Gesell moved to Moorhead at age 19, inherited the Probstfield Old Trail farm, and developed it through market gardening.
